Head Chef \- Restaurant Manager Company Description In order to ensure the operational management and steering of a collective catering restaurant in a school environment located in the Riviera vaudoise region, our client has commissioned us today for the recruitment of their future Head Chef \- Restaurant Manager (M/F) CDI \- 80 to 90 % Job Description As Head Chef and Restaurant Manager, you will be the guarantor of the smooth running of the kitchen, both operationally and managerially, with the mission of proposing quality culinary services adapted to your clientele. At the head of your team, you will participate in the production of more than 220 meals per day, while coordinating hot and cold chain deliveries to partner institutions for a volume of approximately 160 additional meals daily. As a true manager of your unit, you will be responsible for the organization of the teams, the planning of activities, the management of purchases, stocks, costs as well as the budget. You will also ensure the development of a balanced, attractive and seasonal catering offer, while guaranteeing compliance with hygiene, food safety and quality standards. Finally, you will maintain relationships of trust with the various internal partners and contribute actively to the smooth running of the establishment. Profile sought Having benefited from recognized training in cooking, you justify a solid career path that has allowed you to hold, for at least five years, the position of Head Chef within a catering environment with a high production volume. Confirmed experience in collective catering is indispensable. Curious and creative, you master current culinary techniques and are able to propose international, balanced and attractive cuisine, capable of satisfying both adolescents as well as the teaching staff and management. You perfectly master the constraints related to collective catering, notably the organization of services in hot and cold chain, as well as HACCP standards and the regulatory requirements in force.
